Ingredients

  • 1 tablespoon olive oil

  • 1 large organic onion, diced

  • 2 cloves garlic, minced

  • 1 organic bell pepper (any color), diced

  • 2 carrots, diced

  • 2 celery stalks, diced

  • 1 zucchini, diced

  • 1 cup organic mushrooms, diced

  • 1 can (28 oz) organic diced tomatoes, with juice

  • 1 can (15 oz) organic black beans, drained and rinsed

  • 1 can (15 oz) organic kidney beans, drained and rinsed

  • 1 can (15 oz) organic corn, drained (or equivalent frozen or fresh)

  • 2 tablespoons chili powder

  • 1 teaspoon cumin

  • 1/2 teaspoon paprika

  • Salt and pepper to taste

  • 2 cups vegetable broth

  • Optional Toppings
  • Fresh cilantro, avocado slices, lime wedges, and diced green onions

Directions

  • Sauté Vegetables: In a large pot, heat the olive oil over medium heat. Add the onion and garlic, sautéing until they start to soften. Add the bell pepper, carrots, celery, zucchini, and mushrooms, cooking for about 5 minutes until they begin to soften.
  • Add Main Ingredients: Stir in the diced tomatoes, black beans, kidney beans, corn, chili powder, cumin, paprika, salt, and pepper. Mix well to combine.
  • Simmer: Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and simmer, uncovered, for about 25-30 minutes, allowing the flavors to meld and the vegetables to become tender.
  • Serve: Taste and adjust seasoning as needed. Serve hot, garnished with your choice of optional toppings.
