Ingredients

  • For the Chicken Thighs
  • 4 bone-in, skin-on chicken thighs (or your favorite cut)

  • 2 tablespoons olive oil

  • Salt and pepper to taste

  • For the Brussels Sprouts
  • 1 pound Brussels sprouts, trimmed and halved

  • 3 tablespoons olive oil

  • 1 cup sauerkraut

Directions

  • Preheat the Oven and Prepare the Chicken: Preheat your oven to 425°F (220°C). In a small bowl, mix together olive oil, paprika, garlic powder, thyme, salt, and pepper. Rub this mixture all over the chicken thighs, ensuring they’re well-coated.
  • Roast the Chicken: Arrange the chicken thighs skin-side up in a roasting pan or on a baking sheet. Place in the oven and bake for about 35-40 minutes, or until the skin is crispy and a meat thermometer inserted into the thickest part of a thigh reads 165°F (74°C).
  • Prepare and Roast the Brussels Sprouts: While the chicken is baking, toss the Brussels sprouts with olive oil, minced garlic, salt, and pepper. Spread them out on a separate baking sheet in a single layer. Put the Brussels sprouts in the oven with the chicken for the last 20-25 minutes of cooking time, or until they are tender and caramelized. Stir halfway through for even roasting.
  • Warm the Sauerkraut: While everything is in the oven, warm the sauerkraut in a small pot over low heat or in the microwave. Alternatively, it can be served cold, based on personal preference.
  • Serve and enjoy: Once the chicken thighs and Brussels sprouts are done, remove them from the oven. Serve each chicken thigh with a generous helping of roasted garlic Brussels sprouts and a side of warm or cold sauerkraut.
