Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes

  • 3 tablespoons olive oil

  • 1 large onion, chopped

  • 3 cloves garlic, minced

  • 2 large sweet potatoes, peeled and cut into 1-inch cubes

  • 4 large carrots, peeled and sliced

  • 1 pound green beans, ends trimmed and cut into 1-inch pieces

  • 4 cups gluten-free beef broth

  • 1 cup red wine (optional, can substitute with additional beef broth)

  • 2 tablespoons tomato paste

  • 1 teaspoon dried thyme

  • 1 teaspoon dried rosemary

  • Salt and pepper to taste

  • 2 bay leaves

  • 2 tablespoons cornstarch mixed with 2 tablespoons water (optional, for thickening)

Directions

  • Brown the Beef: Heat 1 tablespoon of olive oil in a large pot over medium-high heat. Add the beef cubes in batches, seasoning with salt and pepper, and sear until browned on all sides. Transfer the browned beef to a plate.
  • Sauté the Vegetables: In the same pot, add the remaining olive oil. Add the onion and garlic, sautéing until the onion is translucent. Stir in the tomato paste and cook for another minute.
  • Deglaze the Pot: Pour in the red wine (if using), scraping up any browned bits from the bottom of the pot with a wooden spoon.
  • Combine Ingredients: Return the beef to the pot. Add the sweet potatoes, carrots, gluten-free beef broth, thyme, rosemary, salt, pepper, and bay leaves. Bring the mixture to a boil.
  • Simmer the Stew: Reduce the heat to low and cover the pot. Let the stew simmer for about 1.5 hours, or until the beef is tender.
  • Add Green Beans: Add the green beans to the pot and cook for an additional 20-30 minutes, or until the beans are tender.
  • Thicken the Stew (Optional): If a thicker stew is desired, stir in the cornstarch-water mixture. Increase the heat to medium and simmer for another 2-3 minutes, stirring continuously, until the stew thickens.
  • Final Seasoning: Taste and adjust the seasoning with additional salt and pepper if needed. Remove the bay leaves.
  • Serve: Ladle the stew into bowls and serve warm, with a side of gluten-free bread if desired.
