Ingredients

  • 4 cups arugula, washed and dried

  • 2 medium beets, roasted, peeled, and diced

  • 1/2 cup walnuts, toasted and roughly chopped

  • 20 large shrimp, peeled and deveined

  • 1 tablespoon olive oil

  • Salt and pepper to taste

  • For the Balsamic Vinaigrette
  • 1/4 cup balsamic vinegar

  • 1/2 cup extra virgin olive oil

  • 1 teaspoon Dijon mustard

  • 1 garlic clove, minced

  • Salt and pepper to taste

Directions

  • Prepare the Shrimp: Preheat the grill to medium-high heat. Toss the shrimp with 1 tablespoon of olive oil, salt, and pepper. Grill the shrimp for 2-3 minutes on each side, or until they are opaque and slightly charred. Set aside to cool.
  • Make the Balsamic Vinaigrette: In a small bowl, whisk together balsamic vinegar, extra virgin olive oil, Dijon mustard, minced garlic, salt, and pepper until the vinaigrette is emulsified.
  • Assemble the Salad: In a large salad bowl, combine the arugula, diced beets, and toasted walnuts.
    Add the grilled shrimp on top of the salad. Drizzle the balsamic vinaigrette over the salad and gently toss to ensure everything is evenly coated.
  • Serve: Divide the salad among plates and serve immediately, offering extra vinaigrette on the side if desired.
